very easy light brown cookies


In truth, you really only need one of these cookies-but they are to good to stop there.
I made them on a whim of sweet craving...These brown sugar cookies will give you a sweet surprise at the end of the day.
All you need is:

1 cup Light brown sugar
1 cup sugar
1 cup Millet flour
1 egg
1 teaspoon vanilla extract
1 teaspoon ( about ) ground Cinnamon

After you mix all the ingredients together-roll them into a small ball and then roll them in sugar -place them on a baking sheet with wax paper. Bake for about 15 mins. or until golden brown. Let sit and enjoy.

It's been a while.



Robbie's back yard has changed dramatically in the last two months or so. The field he used to run in is now an ocean -filled with only the best sand, sea weed, sea glass and rocks around. There is never enough time spent down by the waters edge as far as he (and I) believe.
In a few short weeks he (and I) have became more familiar with our new area. Robbie can now run freely in the sand and play with the other dogs as he chooses. There is Vito, Gunner, Hobbes, Harley and Daisy & Deliha on any given day... It's a dog friendly kind of world out there and that's how we like it.
As August folds into September time passes through us, new place, new job, new faces. So many new things it's no wonder that its time for some Pumpkin Scones.
Once again I got this great idea from the GFG !
Perfect for those long car rides to football games or just for breakfast, you choose. But I am sure you will not be disappointed with this recipe of yum.

So here is another birthday cake. BUT it is just as good if not better then the last one...
Made with "King Aurthur" DF/GF flour its just as good as it looks.
Add some raspberries and you are ready to have a real party inside and out.

Happy Birthday Cake !!


This is a gluten free-milk free cake, and it is actually really great.
It's pretty rich, I added another egg as it suggested for a lighter cake. . .
and the powdered sugar frosting adds a little extra zing.
Since it was a birthday party I was a little anxious trying it for the first time, but it turned out well.
Two thumbs up!

Brownie Bites continued . . .



This is taken a bit further then the last batch-- In place of the chocolate chips add crunchy peanut butter to your liking. . . I added a couple or more table spoons since I really like all things peanut butter. It not only helped the texture but the taste is that much better and intense, way better then the first batch for sure.
Good to get through any work day with!!

Stretching those early mornings out a little bit longer. . .

Wake up and stretch early in the morning 'cause you might be able to grab a bite of these Vegan Brownie Bites.
The idea was found in "Food&Wine"...
The end result was a little disappointing but there is of course room for improvement. Adding a little peanut butter or peppermint might be one of those, but we'll have to try that out later and let you know how that goes.


* ACTIVE: 15 MIN

* TOTAL TIME: 30 MIN
* SERVINGS: makes 2 dozen 2-bite brownies

* Healthy
* Make-Ahead
* Vegetarian

Ingredients

1. Vegetable oil spray
2. 1/2 cup plus 2 tablespoons Bob's Red Mill gluten-free, all-purpose baking flour
3. 1/2 cup sugar
4. 1/4 cup unsweetened cocoa powder
5. 1 1/4 teaspoons baking powder
6. 1/8 teaspoon baking soda
7. 1/2 teaspoon salt
8. 1/4 teaspoon xanthan gum
9. 1/2 cup applesauce
10. 1/4 cup canola oil
11. 1 tablespoon pure vanilla extract
12. 1/2 cup dairy-free mini chocolate chips

Directions

1. Preheat the oven to 325°. Spray 2 mini muffin pans with vegetable oil spray. In a bowl, whisk the baking flour, sugar, cocoa powder, baking powder, baking soda, salt and xanthan gum. In another bowl, whisk the applesauce, oil and vanilla; stir into the dry ingredients. Stir in the chocolate chips. Spoon the batter into the muffin pans, filling them three-quarters full. Bake for 15 minutes, or until set. Let the brownies cool in the pans for 15 minutes, then turn out onto a rack to cool completely.

Sweet Polenta Cake




This Lemon Polenta Cake,was pretty good.The idea was taken from the "Gluten Free Goddess" website (my favorite website for this kind of thing).Where she replaced the lemon with banana's. However I wanted to try the original idea and go ahead with lemons. All in all considering this is a gluten-free and dairy free cake, I would make it again. It's a little dry, sort of like a corn bread feel- But add a little sorbet and it will be a great dessert.
You can make it the hard way(where you beat all the ingredients in stages, or you can save time and combine them all together. . . By accident( like reading the directions to quickly and not paying attention) I realized that it didn't really matter, (or appear to) when you combine the ingredients all at once.
Prefect for a dinner party, and they will never have to know it's gluten-free/dairy free.
